OUR FAMILY. OUR STORY.

A legacy of tradition,
family & Trinidadian flavour.

01

Roots in Paramin

Patricia was born in Cocorite, Trinidad, and raised in the hills of Paramin by her grandmother, who taught her many of the cooking skills that would later become the foundation of her business. Her family also owned a beach house in the fishing village of Maracas Bay, where they spent their July and August vacations throughout her teenage years.

02

A love story on the sands

Bruno’s family originated in Santa Cruz, in the Samboco area, and he grew up in Maracas Bay. A talented musician, Bruno would entertain visitors along the beach by singing and playing the cuatro guitar. It was on the sands of Maracas Bay that Patricia and Bruno met, fell in love and eventually married. After welcoming their first child, Patricia recognised the need to provide for her growing family and decided to turn her cooking skills into a business.

03

Small beginnings. Lasting flavour.

She began modestly, selling traditional local treats such as pholourie, tamarind balls, sugar cakes, nut cakes, chips and drinks from a small roadside setup. As she established herself, local fishermen would regularly offer her fresh fish to purchase and sell. This opportunity eventually led to the couple building a simple board shed beside the roadside standpipe, a familiar landmark in the area. There, they began selling the now-iconic bake and shark, along with bake and kingfish.

04

More to savour

Driven by creativity and a desire to offer customers more variety, Patricia continued expanding the menu. She introduced a range of additional favourites, including fries and shrimp, fish pies, saltfish accra and other local delicacies, helping to shape the diverse food offerings that customers would come to enjoy.

05

Built on faith and perseverance

The journey was not always easy. Through decades of challenges, uncertainty and change, Patricia and Bruno remained determined and never gave up on the business they had built together. Their perseverance, faith and commitment helped transform a small roadside operation into a lasting family legacy.

06

Grateful for every chapter

Today, Patricia gives thanks to God for the blessing of being alive to witness how far the business has come since those humble beginnings in 1976. She is deeply grateful to every customer who has supported Patsy’s Bake and Shark over the years — those who have been there from the beginning, those discovering the business for the first time, and even those whose criticisms have encouraged growth and improvement.

Every customer, every experience and every chapter of the journey has played a part in shaping Patsy’s Bake and Shark into what it is today.

From a humble roadside shed in Maracas Bay to a name rooted in Trinidad and Tobago’s food culture, Patsy’s Bake and Shark remains a testament to family, faith, perseverance and the timeless taste of Trinidad and Tobago.
